A Sundance Film Festival Exclusive Dinner

The Sundance Film Festival is one of my favorite times to live and work in Park City.  From the people watching to the films to the fun events going on around town, I really love how vibrant my little mountain town becomes.


As a private chef and owner of a Park City catering company, the Sundance Film Festival is also one of our busiest times of year.  Since we offer everything from cooking private in-home dinners for VIPs that don't want to brave the crowds or deal with reservations to handling large scale exclusive events and parties, every single day is different and challenging (and fun)!




I am particularly proud of an event we did at the 2018 Sundance Film Festival for Oculus.  Really, it was a series of events stretching out over 4 days.  We hosted two large cocktail parties two nights in a row with over 200 guests each night, followed by an even more exclusive plated dinner for 50 people the following two nights.


The dinner menu was created just for this event and focused on local and sustainable ingredients, warming flavors and unique twists on classic dishes.  We also made sure that there were equally delicious options for those with dietary restrictions.  



The evening started out with a cocktail hour and passed appetizers.  Followed by a sit-down, 4 course dinner.  Here is our menu that we created just for the Oculus event:



Sustainably Sourced Scallop Ceviche

Local Wild Mushroom Crostini with Chive Oil 



Sliced Red Pear with Fennel and Persimmon



Butternut Squash Soup with Charred Marshmallow and Fried Sage



Quartered, Brined, Herb Roasted Chicken with Parsnip Mash and Lemon-Garlic Roasted Broccolini 



Seasonal Meyer Lemon and Thyme Semifreddo
